We sometimes like to serve some fresh veggies and dip alongside a meal instead of a salad. Or- even eat as a snack! I have been trying to come up with a recipe to replace the old commercially made stuff we used to buy that we liked that is loaded with preservatives and chemicals that we now avoid. This stuff has a little zesty kick to it and it is awesome! And a few dips make the healthy veggies disappear all the more quickly!
Zippy Raw Ranch
INGREDIENTS
2 cups raw cashews soaked 1 hour
2 medjool dates – soaked with cashews
1 ¼ cups water
2 tbs apple cider vinegar
1 tbs lemon juice
2 ½ tsps. Garlic powder
1 ½ tsps. Onion powder
2 ½ tsps. Dill weed
1 tbs dried chives
2 tbs dried parsley
½ tsp salt
½ tsp red pepper
DIRECTIONS
Place cashews and dates in blender. Add water and let soak for at least 30 minutes. Add remaining ingredients and blend until smooth. Add additional water of plant-based milk to thin to use as dressing.
Traditional Ranch
INGREDIENTS
1 cup grape seed oil Vegenaise (or other vegan mayo)
1 tablespoon apple cider vinegar
1 1/2 teaspoons dried parsley flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried dill
1/4 teaspoon sea salt
1/4 teaspoon red pepper
Another Version
INGREDIENTS
1 cup vegan mayonnaise
½ cup vegan sour cream
1 tsp Worcestershire sauce
1 tsp vinegar
1 tbs dill weed
1 tbs chives
1 tbs parsley
1 clove garlic or ½ tsp garlic powder
½ tsp red pepper
½ tsp black pepper
Whisk all ingredients together until mixed thoroughly. Refrigerate.
TIP
To make thinner for dressing, add approximately 1/4 cup almond or other plant-based milk more or less depending on your preference.
