Our family LOVES these! And, come to think of it, so does everyone else we have ever served them to! Who would not love some dark chocolate all muddled together with, peanut butter, honey, raisins and coconut?!! They are quick, easy – no baking required! Sugar, wheat and dairy free, so Ok to have a little sweet treat now and then! Great to cut into bite-sized pieces to have a little something sweet after a meal or as a snack.

Chocolate Muddle Bars

Ingredients
coconut oil cooking spray
1 cup peanut butter, almond butter or a combination (I do ½ and ½)
2/3 cup honey
1/2 cup coconut butter
1 teaspoon vanilla
1 1/4 cups dark chocolate
2 cups old fashioned rolled oats
1 cup shredded coconut
3/4 cup goji berries or raisins
½ cup raw cacao nibs

Directions
1- Spray bottom of 13″ x 9″ pan lightly with coconut oil cooking spray.
2- Combine peanut butter, honey and coconut butter in a large pan over low heat and stir until melted and well combined.
3- Remove from heat and stir in vanilla.
4- Add remaining ingredients and stir until thoroughly mixed.
5- Pour into prepared pan and spread evenly.
6- Place in refrigerator until set.
7- Remove and cut into bars.  
Store in refrigerator or freezer.

Tips

  • You may substitute coconut oil in place of the coconut butter.
  • Try substituting dried cranberries for the goji berries and raisins or use a mix of fried fruits and try adding some nuts to change things up a bit!
  • Substitute carob chips and leave out cacao nibs if you are avoiding chocolate.
  • Most dark chocolates are dairy free- if you use regular chocolate chips, they may contain dairy. Check your labels.
  • Serve directly out of the ‘fridge or set them out to soften up a bit just before serving – I like them a little soft.

Ingredients

    These are DELICIOUS! I left out the coconut due to grandson’s aversion to the texture and used cranberries. I think I could eat the entire batch myself! Definitely a winner!
