Ingredients
- 2 cups peeled, diced potatoes
- 1 cup peeled, diced carrots
- 2/3 cup aquafaba or plant-based milk
- 3/4 cup nutritional yeast
- 1/2 cup olive oil
- 1 tbsp Dijon mustard
- 4 tsp lemon juice
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dry mustard
- 1/2 tsp paprika
- 1 tsp salt
Directions
- Boil potatoes and carrots until soft – about 10 minutes. Drain and let cool.
- Place all ingredients into blender and process until smooth.
