Just because you have decided to eat healthier doesn’t mean you have to give up some special occasion treats! Like these tasty little donut gems! Great for a special occasion, a lazy Saturday morning breakfast treat or even a fun snack for the kiddos! Makes 18 small donuts.
Ingredients
- 1 cup whole wheat flour
- ½ cup all-purpose white flour
- ½ cup coconut or date sugar
- 1 Tbsp ground flax seeds
- 1 ½ tsp baking powder
- ½ tsp sea salt
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1/3 cup sunflower oil
- 1 cup almond milk
Instructions
- Preheat donut maker
- Combine dry ingredients, stir well to combine
- Make a well in center of dry ingredients. Pour oil and almond milk into center. Mix well.
- Spoon batter into donut maker until batter is just even with the top of the donut mold.
- Close lid and bake until done.
- Remove donuts and allow to cool a bit before drizzling with chocolate glaze.
Chocolate Glaze:
- 1 cup vegan dark chocolate chips
- 1-2 tsp coconut oil
- Combine ingredients in a double boiler and mix together.
- Use spoon to drizzle over the top of the donuts.
Tips
* This is the donut baker I have and use. I actually have 2 of them so I can make a lot when we have guests or teaching classes. 😊 You could also bake them in a donut pan like this as well, or even use a muffin pan and pour just a small amount of batter in the bottom. They will be round but will not have a hole in the middle – but they will still be tasty!
*You might need to stir in a bit more almond milk to get the batter the right consistency… not too thick.
*I have found that with my donut baker, they require a bit longer than when the built-in indicator thinks they are done, so experiment with your donut baker to get the perfect timing.
*alternative method to drizzle chocolate glaze over the donuts is to put the glaze in a Ziploc bag and snip a small corner off the bottom and use like a small pastry bag.
*They are also great without the chocolate glaze. Or another option is to put some coconut sugar in a coffee grinder and make your own powered sugar to sprinkle on top.
