Lazy Morning Breakfast Treat Donuts

Great for a special occasion, a lazy Saturday morning breakfast treat or even a fun snack for the kiddos!

Equipment

  • 1 Donut baker

Ingredients

  • 1 cup Whole wheat flour
  • ½ cup All-purpose white flour
  • ½ cup Coconut or date sugar
  • 1 Tbsp Ground flax seeds
  • tsp Baking powder
  • ½ tsp Sea salt
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg (optional)
  • cup Sunflower oil
  • 1 cup Almond milk

Chocolate Glaze

  • 1 cup Vegan dark chocolate chips
  • 1-2 tsp Coconut oil

Instructions

  • Preheat donut maker
  • Combine dry ingredients, stir well to combine
  • Make a well in center of dry ingredients. Pour oil and almond milk into center. Mix well.
  • Spoon batter into donut maker until batter is just even with the top of the donut mold.
  • Close lid and bake until done.
  • Remove donuts and allow to cool a bit before drizzling with chocolate glaze.

Chocolate Glaze

  • Combine ingredients in a double boiler and mix together.
  • Use spoon to drizzle over the top of the donuts.

Notes

Tips
  • This is the donut baker I have and use. I actually have 2 of them so I can make a lot when we have guests or teaching classes. 😊 You could also bake them in a donut pan like this as well, or even use a muffin pan and pour just a small amount of batter in the bottom. They will be round but will not have a hole in the middle – but they will still be tasty!                   
  • You might need to stir in a bit more almond milk to get the batter the right consistency… not too thick.
  • I have found that with my donut baker, they require a bit longer than when the built-in indicator thinks they are done, so experiment with your donut baker to get the perfect timing. 
  • Alternative method to drizzle chocolate glaze over the donuts is to put the glaze in a Ziploc bag and snip a small corner off the bottom and use like a small pastry bag.
  • They are also great without the chocolate glaze. Or another option is to put some coconut sugar in a coffee grinder and make your own powered sugar to sprinkle on top.
